Canning Essentials

  • Water bath and steam canning: a sturdy canning pot or steam canner, a rack, a jar lifter, a wide-mouth funnel, a bubble remover, and reliable jars. Add new lids and bands to round it out.
  • Pressure canning: a quality pressure canner, extra gaskets if needed, and a trivet. Include a reminder to check dial gauges yearly with a local Extension office.
  • Helpful extras: a digital timer, clean kitchen towels, and heat-safe gloves.
  • Learning: I follow research-based sources for safety. I keep a link to USDA guidance handy and use tested recipes. I explain my approach here: Safe and Tested Canning Resources

Dehydrating Favorites

  • A dehydrator with an adjustable thermostat and good airflow.
  • Mesh screens for herbs, and solid trays for fruit leather.
  • Sharp knives, a mandoline, and lemon juice or ascorbic acid for color.
  • Storage that lasts: glass jars, mylar bags, or freezer bags with labels and dates.

Pickling Picks

Freezing Must-Haves

  • Freezer-safe containers with tight lids, wide-mouth jars for broth, and heavy-duty bags.
  • A vacuum sealer for long-term storage, plus extra rolls.
  • Sheet pans for flash-freezing berries, veggies, and baked goods.
  • Stackable bins to keep shelves tidy, and a simple freezer inventory sheet.
